Flaky Sweet Potato Honey Biscuits (4) Hey peoples! I hope you all had an awesome weekend. Mine was pretty great.

Flaky Sweet Potato Honey Biscuits (2) We had an addition to our family near the end of last week. No, not the human kind if that’s what you’re thinking. These guys are a little furrier than that. We brought home 2 adorable 6-week-old Great Pyrenees puppies. In case you are unfamiliar with that breed, they are really big dogs. (I’ll post some pictures soon!)

Flaky Sweet Potato Honey Biscuits (5) We used to have 4 of them before moving here but we had to leave them with friends. We knew that the travel involved in getting them here with us would be too hard on them,assuming they even made it in the first place. We have all missed them a lot though so my parents have been trying to find a breeder in our area. They finally did and now, I am so excited, we have 2 little furballs around.

It’s not that we haven’t tried, but do you have any idea how hard it is to come up with a unanimous choice in such a big family? Right now they are just going to have to be dog 1 and dog 2 until we can make a decision.

Flaky Sweet Potato Honey Biscuits (3) I’ve never posted a recipe using sweet potatoes until now because there are few varieties here and most of them are white inside. That’s fine for eating. I think the white ones taste sweeter but most people are accustomed to sweet potatoes being orange and I just haven’t wanted to try and explain why mine weren’t.

Flaky Sweet Potato Honey Biscuits (8) I used a combination of white ones and orange ones for this recipe. So that’s why my biscuits aren’t super orange. Don’t let the potatoes throw you because these are every bit as good as your classic buttermilk biscuit. Maybe even better!

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 12 - 15 biscuits

Flaky Sweet Potato Honey Biscuits

Ingredients

  • 1 egg
  • 3/4 cup sweet potato puree
  • 1 tablespoon baking powder
  • 1 tablespoon honey
  • 6 tablespoons cold butter, cubed
  • 1 teaspoon salt
  • 2 1/3 cups all-purpose flour

Instructions

  1. Preheat oven to 400 degree F (200 C).
  2. In a large bowl or food processor, combine flour, salt, and baking powder. Cut in butter or pulse until finely mixed. Add honey, egg, and sweet potato puree and stir until it forms a dough.
  3. Turn out onto lightly floured surface and roll into a layer about 1 inch thick. Use a round cutter or even an upturned cup to cut into circles.
  4. Place an inch or 2 apart on parchment lined baking pans and bake for 10 - 15 minutes until tops are golden brown.
  5. Cool for about 5 minutes before serving.

I’ve made something very chocolate again and I won’t even try to make excuses today.

Double Chocolate Chunk Whole Grain Avo-nana Muffins I recently told you all in this post about how much I love to make healthy food for my sister who is expecting and how I love when she (or Baby) has specific cravings. Well, this was one of those cravings. Apparently she’s dreamed about them and they cause Baby to do somersaults when she eats them. Double Chocolate Chunk Whole Grain Avo-nana Muffins (2) These are full of nutrition: avocado, banana, whole grain flour, and sweetened with a mix of honey and raw sugar. The best part is that everyone loved them. I can usually expect anything dubbed “healthy” to be snubbed by certain younger siblings but with these everyone was happy.

Double Chocolate Chunk Whole Grain Avo-nana Muffins (3) In fact, the first batch was devoured so quickly by everyone that I had to make a second in order for Baby to get his fair share. That’s why I am posting this recipe today. I had planned to try something else until I realized that these were so popular that they were gone. When a pregnant woman needs her muffins you don’t ask questions, you start measuring flour.

Double Chocolate Chunk Whole Grain Avo-nana Muffins (4) So you can probably tell that I didn’t put a whole lot of effort into props and stuff with these pictures and I am going make excuses for that. I’m really not thrilled with these pictures you guys but I am still unpacking stuff and haven’t even had the chance to decide where I like the lighting best in this house, let alone find dishes and props.

I mean, making dinner isn’t exactly rocket science until you can’t even find a can opener, strainer, or cheese grater. It’s Dinner Impossible when you’re trying to make food the first night. Very comical.

Double Chocolate Chunk Whole Grain Avo-nana Muffins (6) I am over the fact that, overall, this is not my most stellar recipe post ever because it’s at least a really good recipe. If you like fudgey muffins that don’t come with all the guilt then you have to try these.

Double Chocolate Chunk Whole Grain Avo-nana Muffins

Ingredients

  • 1 medium banana
  • 1 medium avocado
  • 2/3 cups honey
  • 2/3 cups raw sugar (turbinado sugar)
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 2/3 cup cocoa powder
  • 1 teaspoon soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/4 cups whole wheat flour
  • 1/2 cup oatmeal flour
  • 1/2 cup barley flour (you can sub with more whole wheat)
  • optional: 100g (about 1/2 cup) chopped semi-sweet dark chocolate

Instructions

  1. Preheat oven to 350 degrees F (180 C).
  2. Mash banana and avocado in a large bowl. Add sugar and honey ane stir well. Add all other ingredients and mix well.
  3. Spoon batter into greased muffin pan and fill nearly to the top. Bake for 18 - 20 minutes until center is cooked and edges are golden.

Shredded Cabbage Salad with Candied Walnuts and Lemon Dijon Vinaigrette (4) We could all use a little more veggies, don’t you think?

Shredded Cabbage Salad with Candied Walnuts and Lemon Dijon Vinaigrette I am kind of a veggie-a-holic. I love salads, stir-fries, and basically just vegetables in any form. This is one of my new favorite combos for a salad. I think I prefer cabbage to lettuce for the base of a salad. I love how crisp it is.

I seriously need to set up better filtering but I’ve been too lazy and it hasn’t been much of a problem until all of a sudden I’ve started getting hundreds of spam comments every few hours. What’s that all about? Now I have about 200 spam comments that I have to delete, Yippee. I’m fixing the problem asap or I might go insane.

I am constantly quoting things from my favorites which include some from just about every genre. Anyway, this salad keeps making me think of a line on Nacho Libre. Anyone seen it? It’s so stupid and yet so funny at the same time. The quote I’m talking about is where Pablo is like “How come we can’t ever have just like a salad?”

Shredded Cabbage Salad with Candied Walnuts and Lemon Dijon Vinaigrette (6) Okay this salad is so simple and so healthy, minus the sugared nuts but who really counts toppings. I through those in just to make sure that it wasn’t too healthy and they only take 5 minutes.

Shredded Cabbage Salad with Candied Walnuts and Lemon Dijon Vinaigrette (10) Oh, and the dressing  is super easy too. You literally just stir some stuff together and call it good.

Shredded Cabbage Salad with Candied Walnuts and Lemon Dijon Vinaigrette (8) This would be great for serving as an appetizer, a side, or just throw on some meat or more eggs and make it a meal.

Sure it looks better for pictures with everything separate and in view, but let’s get real. Everyone in my house likes it better all chopped and mixed together.

Shredded Cabbage Salad with Candied Walnuts and Lemon Dijon Vinaigrette

Ingredients

    Salad:
  • 1/2 head green cabbage, cored and finely shredded
  • 1 bunch radishes, washed and thinly sliced
  • 2 medium green apples, washed and thinly sliced
  • 3 large carrots, shredded
  • 6 hard boiled eggs, peeled and cut in half
  • Candied Walnuts:
  • 1 cup walnut halves
  • 2 tablespoons butter
  • 1/4 cup white sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • Lemon Dijon Vinaigrette:
  • 2/3 cup extra virgin olive oil
  • 3 tablespoons white wine vinegar
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoon freshly squeezed lemon juice
  • Coarse salt and freshly ground black pepper

Instructions

  1. For Dressing:
  2. In a small bowl, whisk together lemon juice, honey, mustard, and vinegar; season with salt and pepper. Slowly whisk in oil until emulsified.
  3. For Candied Walnuts:
  4. Add all ingredients for nuts to a non-stick pan and place over medium heat. Stir constantly for about five minutes until sugar is completely melted. Pour out onto parchment lined tray or plate and use spatula to seperate nuts before they cool. Set aside and allow to finish cooling.
  5. To assemble:
  6. Add cabbage, radishes, apples, and carrots to a large salad bowl and pour dressing over salad. Toss to coat everything then top with walnuts and eggs.
