One-Pot Leftover Thanksgiving Turkey and Brown Rice Pilaf (5) It’s official. One week from today is turkey day for all of you up in that little place I like to call the United States. The day when thousands of people will be sitting down to home-cooked feasts with friends and family and eating until they are so stuffed that they need to unbuckle their pants.

One-Pot Leftover Thanksgiving Turkey and Brown Rice Pilaf Growing up in the States, I never considered that there were people out there that didn’t celebrate Thanksgiving and follow the traditions that my family ( and everyone else I knew ) did. It just never crossed my mind. That seems kind of ridiculous to me now obviously. You know, because most of the world doesn’t celebrate it. My horizons have been expanded quite a bit from my small-minded American girl days.

You can’t just not celebrate a favorite holiday! I wonder if we’re the only crazy people out there who celebrate holidays from other countries. We’re weirdos. But then, come to think of it, there are many places in the U.S. where they celebrate Cinco de Mayo and that’s a Mexican holiday so there are bound to be others out there that are as crazy as we are.

One-Pot Leftover Thanksgiving Turkey and Brown Rice Pilaf (10) That’s all beside the point anyway because you don’t have to have leftover Thanksgiving turkey to make this recipe. Use leftover Christmas turkey, most of the world celebrates that holiday right?  Really though, you can use any meat that you want. I usually like to add chicken when I make this. It’s one of my favorite ways to use up all of those random veggies in the fridge and it’s so easy.

One-Pot Leftover Thanksgiving Turkey and Brown Rice Pilaf (6) This is the perfect thing to throw together for a weeknight dinner. It takes about 1 hour from start to finish because of the brown rice but most of that is hands-off. Plus, it all happens in one little ol pot which makes this a very low maintenance (low dishes) dinner.

One-Pot Leftover Thanksgiving Turkey and Brown Rice Pilaf

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

Yield: 6 - 8

Ingredients

  • 3 tablespoons olive oil
  • 1 small onion, finely chopped
  • 5 cloves garlic, minced
  • 5 medium carrots, chopped
  • 1-2 cups any veggies you have on hand, chopped (There are no rules here. I used mushrooms, broccoli, cauliflower, and zucchini)
  • salt & pepper
  • 2 tablespoons fresh rosemary, chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • salt & pepper
  • 4 cups chicken stock
  • 2 cups uncooked brown rice
  • 3 cups shredded turkey meat

Instructions

  1. In a dutch oven or heavy bottom pot with tight fitting lid, saute onions and carrots over medium heat for about 5 minutes until softened.
  2. Add garlic and chosen veggies and continue to cook for 2 to 3 minutes more. Pour in stock and add brown rice, rosemary, oregeno, and cumin. Cover and reduce heat to low. Simmer, stirring occasionally, for about 45 minutes or until rice is al dente.
  3. Stir in turkeyto warm and add salt and pepper to taste.
  4. Serve hot.

Spiced Whole Wheat Sweet Potato Bread with Brown Butter Icing (2) I hope you are in the mood for something that’s really, really yummy!

Spiced Whole Wheat Sweet Potato Bread with Brown Butter Icing Okay good, me too. Would those of you who love spice breads please come forward. I’m not trying to brag or anything but this recipe is going to make your day.

Spiced Whole Wheat Sweet Potato Bread with Brown Butter Icing (3) I know it isn’t the most common of spice breads. Most people would tend towards using pumpkin before they would think about sweet potato but my guess is that’s just because pumpkin puree is easier to come by. However, for those of us who cook our own pumpkins, sweet potato is actually an easier option and I must say I think I like it better.

Spiced Whole Wheat Sweet Potato Bread with Brown Butter Icing (4) This bread is every bit as moist and flavorful as pumpkin bread and I even used all whole wheat flour. It doesn’t necessarily need the icing but, come on, brown butter icing? It just had to happen.

And it’s basically health food because, like, it has whole wheat flour and eggs, and sweet potatoes are vegetables right? So yeah, health food. Uh huh.

It has some challenges but I’m working through them so hopefully I won’t have any repeats of yesterdays horrible pictures. I will just try to sweep that post under the rug until I can do a redo.

Spiced Whole Wheat Sweet Potato Bread with Brown Butter Icing

Ingredients

    Sweet Potato Bread:
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup + 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon each of cloves, nutmeg, ginger, and allspice or 1 teaspoon of pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 3/4 cups mashed sweet potato
  • 1 cup whole wheat pastry flour
  • Brown Butter Icing:
  • 2 tablespoons butter
  • 2/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 1 - 2 tablespoons milk

Instructions

  1. Preheat oven to 350 degrees F (180 C) and grease a 5x9-inch loaf pan.
  2. Whisk together oil, sugar, and eggs in a medium bowl. Add spices, salt, vanilla, and soda. Stir in flour and sweet potato puree.
  3. Pour batter into pan and bake for 45 minutes to 1 hour until toothpick inserted in center comes out clean.
  4. While bread is baking make your icing. Melt butter in a small saucepan or skillet and stir constantly until it starts to turn, you guessed it, brown. Remove from heat and cool for about 5 minutes. Add powdered sugar, salt, and vanilla. Add milk a little at a time until you have your desired consistancy.

Notes

You can also double this recipe and bake it in a 13x9 pan for serving more people.

Apple Cinnamon Hand Pies Today I have a delicious recipe to share but you just have to let me sound like a broken record and apologize beforehand that these pictures are really bad. I mean bad bad. I wasn’t going to use them but my family is insisting that I share this recipe. Besides, it wouldn’t be fair to deprive you of getting to try these just because I suck at taking pictures.

Apple Cinnamon Hand Pies (6) In my defence, my photography has been pretty expiramental since moving in to our new house and I can’t seem to find a place to get consistantly good lighting. If you have ever done any kind of photography than you probably understand how important that is. I am not a photographer by any standard. In fact, quite the opposite and I haven’t learned how to work in bad lighting. I’m trying.

Apple Cinnamon Hand Pies (4) Okay, now that that’s out of my system I can tell you that they taste really good. This may be one of our new fall favorites. Anyone who loves apple pie will love them. You have to make them!

Apple Cinnamon Hand Pies (3) You should prabably make extra too. My 11-year-old brother Brock loves apple pie and he was so excited about these. The whole time I was making them he and my 6-year-old sister Sophie kept pleading for one. They can be very persistant and I felt so bad telling them no repeatedly because I needed to take pictures first. Poor kids, it was torturing them.

Apple Cinnamon Hand Pies (2) These are fairly simple with basic ingredients that everyone should have on hand and they are perfect for this month. I am getting super excited about this weekend. You see, my family is kind of weird and we put up our Christmas tree and decorations the weekend before thanksgiving so we will be decking the halls. For me it is a must to have a tree up on Thanksgiving morning while we start our prep for dinner.

Yield: 18 - 22 pies

Apple Cinnamon Hand Pies

Ingredients

    Filling:
  • 8 medium apples, cored, peeled, and chopped
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons butter
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • 1/3 cup flour
  • 3/4 cup brown sugar
  • Crust:
  • 1/2 cup brown sugar
  • 1 teaspoon salt
  • 3 cups flour
  • 3/4 cup (1 1/2 sticks) ice cold butter, cubed
  • 6 tablespoons lard or shortening
  • 1/2 cup ice cold water
  • Eggwash:
  • 1 egg yolk beaten with 2 tablespoons water
  • sugar for sprinkleing on top

Instructions

  1. Toss apples in cider vinegar in a large bowl.
  2. In large saucepan, melt butter then add apples. Cook for about 5 minutes over medium heat until apples start to soften.
  3. Add spices, salt, and brown sugar and continue cooking until mixture is very juicy. Slowly sprinkle in flour while stirring and continue stirring until thickened. Add vanilla and set aside to cool while you make the crust.
  4. Preheat oven to 350 degrees F (180 C). Combine flour, sugar, and salt in a food processor or large bowl and mix well. Cut in butter and lard until mixture is fine and crumbly. Slowly add about half of the ice water and mix until a dough forms. Add more water as needed until dough is workable.
  5. Roll out on lightly floured surface into a layer about 1/8 inch thick. Cut into 3-inch rounds (or any size and shape you would like.) then gently re-roll scraps and cut again.
  6. Spoon a few tablespoons of filling onto centers of half of your rounds, leaving about 1/2 inch for sealing. Top each with a sacond round and press down on edges to seal.
  7. Place on parchment lined baking tray and brush with eggwash then sprinkle with sugar.
  8. Bake for 15 - 20 minutes until edges are golden brown.
  9. Serve warm or at room temp.
