Okay, These burgers are seriously amazing. You must try them!
I’ve had this idea in my head for about a week now. I guess you could say that it came to me in a dream. I actually thought of it while trying to sleep. You know that stage between sleeping and waking. Your thoughts get all jumbled and you think of things like rainbow aardvarks and aqua plus duckling equals zoom.
I am not crazy. I just don’t sleep very much. I know it is unhealthy and that your body needs plenty of sleep but I can’t help it. I try to sleep but I am just a morning person. I don’t understand people who can sleep all day long.
Anyway, this concoction has got to be the best thing since pb&j. You can’t skip the avocados on top though. If you add no toppings at all, at least add the avocados. It’s like a vacation in your mouth.
Ingredients
- 2 cups Greek or plain non-fat yogurt
- 1/4 freshly squeezed lime juice
- 1 medium bunch fresh cilantro
- 1 1/2 tablespoons honey
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/8 teaspoon grated ginger (optional)
- 1 pound ground chicken
- 1 cup black beans
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon lime juice
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 2 tablespoons butter
- 1/4 cup (1/2 stick) butter, melted
- 1/4 cup oil
- 2 large eggs
- 2/3 cups sugar
- 1 cup buttermilk
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 cup cornmeal
- 1 cup flour
- 2 tablespoons pickled jalapeños, chopped
- 1 cup shredded cheese of choice (cheddar is amazing)
- 3/4 cup whole kernel corn
- avocados, sliced or smashed

Instructions
- Combine all ingredients for sauce except yogurt in food processor or blender; blend until smooth. Pour into medium bowl, add yogurt, and stir until combined. Set aside to make the
- Combine all ingredients for burgers in large mixing bowl and stir well to combine. (Optionally, you can smash the beans first for a more uniform looking burger, but your burgers will be slightly smaller from compacting the beans.) Over low heat, melt butter on medium skillet. Cook burgers on each side for about 8-10 minutes until done all the way through. Remove to plate and cover until ready to serve.
- Mix butter, oil, buttermilk, and sugar in medium mixing bowl. Beat in eggs. Add cornmeal, soda, salt, and flour. Stir in jalapeños, cheese, and corn. Heat waffle iron and brush with oil. Follow directions in the instruction manual for making waffles in you waffle iron.
- To assemble, layer burgers and desired toppings on waffles. Drizzle with yogurt sauce and top with second waffle.
