Strawberry Limemade Green Machine Smoothie (Vegan)

Happy friday peeps! So, I can think of more than one occasion that I’ve mentally berated myself (Eh hem, and maybe some others too. Guilty.) for being so boring and unimaginative as to talk about the weather in a blog post. But I’m breaking my own rules right now, cuz it’s stinkin’ hot you guys.

Strawberry Limemade Green Machine Smoothie , It has never ceased to amaze me how drastic the intensity of the sun is down here. Our climate is really very mild almost all year long, but on the few days of the year that the sun gets its way and there are no clouds to obstruct its path, it can get really hot. I spent New Year’s with a stupid sunburn because I was retarded enough to think I could stay in the sun for any length of time in a tank-top without my English skin getting scorched. Dumb move. That was definitely a first, being tomato red on the first day of the year. It was so messed up.

Strawberry Limemade Green Machine Smoothie (7) It’s hitting the peak of the summer heat, well maybe not the peak, but the later end of the summer turns into a dryer heat that isn’t as stifling. Right now you can cut the air with a knife it’s so humid. This is the only time of year that reminds me of my childhood growing up in Nashville’s muggyness. It makes me think of the Twilight Zone episode where the sun is getting closer to the earth and everything is melting. Only, I don’t think I get to wake up and find out that the world’s actually freezing over instead like the lead female character did. (I’m a sucker for the classics if you haven’t noticed.)

Strawberry Limemade Green Machine Smoothie (2) It usually cools off enough in the evening that there’s no need to open windows, but the last few days have left me with an unpleasant decision. Either I open the windows to stay cool and face the fact that I’ll probably have bugs landing on me all night because (as I’ve ranted about many times in the past) there are no window screens in this country. This is something I really don’t understand, they have almost every other modern convenience so you’d think someone would have figured it out already, ugghh. The alternative is that I leave the windows shut and just melt all night. I’ve been choosing the latter because the big, fat, green beetles that are in season at the moment freak me out way more than a little sweating does.

Strawberry Limemade Green Machine Smoothie (5) Okay, but I’m making this sound way worse than it is. Minus the few days nursing blistered shoulders or the moments of silent terror over buzzing insects, I’ve been really enjoying some warmth. I also feel very blessed to be where I am and I love living in Chile.

Strawberry Limemade Green Machine Smoothie (3) Anyway, I’m actually writing this post ahead because today, or the day I plan to post this, is the day I’m doing the catering for a friend’s wedding and I’ve got a ton of things to finish. I’ll be sharing pictures, and possibly recipes, as soon as I can afterwards if anyone is interested to see! I’m really excited about making my first wedding cake ever!

Strawberry Limemade Green Machine Smoothie (8) I think I’ve gotten pretty good at faking it, like for Christmas and stuff, that I live in the opposite hemishpere still. But for today I’m not going to pretend it’s cold and I’m all cozy, because the reality is just too opposite. That’s why I thought a smoothie would be a good way to please everyone today, and this one also fits the bill for a healthy January, yay! I’ve probably mentioned way too many times that my little brother is obsessed with smoothies, but he is. Brock would be thrilled if I made him a smoothie everyday, and I try to make them as often as possible since it’s the easiest way to get him to eat (or drink) some nutrition. I think if he was allowed he’d be trying to live on a diet of chili cheese Doritos and Sprite. Oh, that kid….

Strawberry Limemade Green Machine Smoothie (4) K, now about this smoothie, it’s only a few simple ingredients, but I wanted to add a little extra fun and make it two toned. However, if you’re not feeling fancy or you’re just in a hurry, you can totally just throw everything in the blender and go. But come on, isn’t the contrast of colors more fun? At least, I think so and the boys thought it was cool too. Stay cool guys (but not too cool for those of you burried in 12 feet of snow right now)!

Strawberry Limemade Green Machine Smoothie (Vegan)

Prep Time: 25 minutes

Total Time: 25 minutes

Yield: 6

  • 2 packed cups fresh spinach
  • juice from 3 medium limes (about 1/3 cup)
  • 2 heaping cups frozen strawberries
  • 1/4 cup honey (or agave nectar for vegan)
  • 1 1/4 cups water or coconut water
  • Green:
  • 1 packed cup fresh spinach
  • 1 medium avocado, pit and skin removed
  • juice and zest from 1 lime
  • 1 tablespoon more honey or agave
  • Red:
  • 2 heaping cups frozen strawberries
  • 1 tablespoon more honey or agave

  1. Combine the ingredients for the base in a blender or food processor and blend until very smooth. Divide the base blend in half (it should be about 4 cups, so 2 cups and 2 cups) leaving one half in blender. Add the ingredients for the green half to blender and blend until smooth. Pour it all out into tall glass cups or jars to fill halfway (use a funnel if needed). Add the other half of base plus the ingredients for red half into the blender and blend until smooth. Pour into glasses on top of green mix and serve immediately.

Can I come down to Chile? Because I am freezing over here! I live oh, 5 hours from Nashville, and we are cold. Way too cold. This smoothie looks really good though! Perfect for any kind of day. We had a slight mold problem with our blender…so do you recommend a kind we should get now?
