Here’s me following a trend just for the heck of it again.
On a scale of one to ten how lame do you think that is? I mean, I don’t think of myself as being follower of the norm by any means, and way more often than not I stay as far from a fad as I can. However, I’ll admit that it’s a rarity, but sometimes a the bandwagon gang knows their stuff, and I’m pretty sure this is one of those times. Avocado toast people, it’s where it’s at!
I think the craze started because avo makes a way healthier alternative to just about anything that would usually make an appearance on your toast. As you all know it’s an incredible super food, plus there’s the fact that it’s completely scrumdidly-YUM-cious! It’s like nature’s version of I can’t believe it’s not butter. Of course, I’m wondering if including cream cheese in the party negates the whole healthy thing, but it’s all in the balance right? Yeah, let’s go with that. I have a strict no-skimping-on-snacktime policy.
Okay, this is a total sidenote, but do you guys remember when Buddy the elf told us about South Pole elves and everything made sense in the world? Well, I’m fairly sure that there is an equivalent for groundhogs. I heard that the groundhogs of the Northern Hem all failed to see their shadow this year, indicating an early Spring.
That must mean the same thing happened here with the opposite result because it’s been unusually cold for like five days in a row now. Dark, damp, and dreary. Yesterday was a bit warmer for about half the day, but not by much. I’m definitely thinking we’re going to have an early Autumn this year, bummer dude. I haven’t gotten my allotment of hot weather days yet and I’m feeling kind of jipped so I really hope it warms back up for the rest of the season. K, thanks for letting me vent for a sec. Sidenote over, back to talking snacks……
This barely counts as a recipe unless you count the fact that I made the bagels myself, but it is Friday and I’m really loving the fact that this is majorly simple right now. Of course, I am going to have to recommend making the homemade bagels, but if you’re trying to enjoy your weekend and you’re just looking for the perfect snack to throw together, then I understand that too. If that’s the case then just make sure to use some really good store-bought bagels for the job (Although, I can’t remember ever meeting a bagel I didn’t like so that may be irrelevant advice). You could use a slice of your favorite bread instead if you’d prefer. A doughy slice of whole grain seed bread would be delish.
So I did go with the wave on this one but I wanted to give my avo toast something of its own twist and with March being right around the corner I was thinking the green on green from adding pistachios would be both gorgeous and yummy. This is definitely how to put the fun back in functional snacks.

Ingredients
- 1 bagel (your favorite flavor), sliced (here's the recipe for homemade sourdough bagels that I used)
- 2 - 3 tablespoons cream cheese, softened
- 1/2 ripe avocado, sliced
- 2 tablespoons pistachios, chopped
- 3 - 4 teaspoons honey
- cracked black pepper & sea salt
Instructions
- Toast bagel until desired crispness. Spread with cream cheese and top with avocado slices, then pistachios, and sprinkle salt and pepper to taste. Drizzle with honey and enjoy!
