Chewy White Chocolate Chunk Orange Cookies

These cookies make me think of my mom. Actually, these cookies make me think of both of my parents. Chewy White Chocolate Chunk Orange Cookies (6)

First let me tell you that my parents are almost the exact same age. My mom is only nine months older than my dad and he has teased her about that fact for as long as I can remember. There is a lot of teasing that goes on between them. When you have been married long enough to have 7 kids, a son-in-law, and a grandbaby on the way there are plenty of things to tease about. My parents have one of those romantic, only-happens-in-the-movies type of love stories about how they met and fell in love. I never get tired of hearing different parts of it.  Chewy White Chocolate Chunk Orange Cookies (8)

The reason these cookies remind me of my parents is because this is another object of lifelong teasing between them.  Chewy White Chocolate Chunk Orange Cookies (9) You see, my mom loves fruit and chocolate together. She says it reminds her of when she was little and she used to eat similar things at her grandmother’s house. On the other hand, my dad is a purist and he hates fruit and chocolate. I am a lot like my dad and I agree with him on many things, but I have to say that I am with my mom on this one (sorry Dad). I think fruit and chocolate go perfectly together, especially white chocolate and orange.  Chewy White Chocolate Chunk Orange Cookies (2) What is your opinion?

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Yield: 3 dozen

Chewy White Chocolate Chunk Orange Cookies

Ingredients

  • 1 cup butter (2 sticks), softened (not melted)
  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 tablespoon fresh orange zest
  • 3 3/4 cups all purpose flour
  • 2 cups(350g) white chocolate chips or chopped white chocolate

Instructions

  1. Pre-heat oven to 350 degrees F (180 C). Cream butter and sugars together in bowl of stand mixer or with hand mixer.Scrape sides of bowl and add eggs; beat until fluffy.Add vanilla, soda, orange zest and salt. Add flour one cup at a time and beat after each addition. If you are using a hand mixer you may have to hand stir the last cup of flour into the dough. Stir in white chocolate and line a cookie sheet with parchment.
  2. Roll into golf-sized balls and place about 2 inches apart on baking sheet. Bake for 8 - 10 minutes until edges start to turn golden brown. Remove from oven and cool for about 5 minutes before moving to cooling rack.

Garbanzo Bean Whole Wheat Pizza Crust (Vegan)

Most of the time when beans are added to a recipe like this is to take the place of flour and make it gluten-free. While this is a great idea and I am sure that you could replace the flour in this recipe with GF flour, I am simply trying to find ways to make food more nutritious for some picky kiddos that like white bread way too much. Chickpea Pizza Crust (3) Pizza is always a good place to start because just about every kid out there likes pizza. I may not be able to get them to eat their veggies on it but this is a work in progress. Chickpea Pizza Crust (4) Adding chickpeas to this crust not only adds fiber but it also adds flavor and texture. This crust is thick and soft. Perfect for your favorite toppings. I must admit that for my house this is usually limited to cheese and pepperoni. Boring, right? If I had it my way I would pile it high with veggies and flavors. The most exotic flavor that I can get away with is usually barbecue chicken. Chickpea Pizza Crust (5)  Homemade pizza is the BEST no matter what toppings are on it. Garbanzo Bean Whole Wheat Pizza Crust (Vegan)

Prep Time: 1 hour, 20 minutes

Cook Time: 30 minutes

Total Time: 1 hour, 50 minutes

Yield: 1 large or 2 small pizza crusts

Garbanzo Bean Whole Wheat Pizza Crust (Vegan)

Ingredients

  • 1 1/2 tablespoons active dry yeast
  • 1 1/4 cup cooked garbanzo beans
  • 4 cups whole wheat flour
  • 1 cup water at room temperature
  • 2 tablespoons olive oil
  • 2 teaspoons sugar
  • 1 teaspoon salt

Instructions

  1. Combine yeast with sugar and water in a small bowl and stir to dissolve the yeast; set aside for about 5 minutes
  2. Meanwhile, pulse garbanzo beans with salt and oil in a food processor or blender until smooth. Add yeast mixture and pulse again. Blend in first 2 cups of flour until it starts to form a dough.
  3. Scrape dough out into a large mixing bowl and add remaining 2 cups of flour. Turn onto lightly floured surface and knead for about 5 minutes. If it sticks to your hands add a little more flour. The dough should be stretchy and resilient.
  4. Place in a well oiled bowl and turn to coat with oil. Cover with plastic wrap or towel and leave in warm place to rise until doubled in size.
  5. At this point you can refrigerate for a later use or bake immediately. To bake, pre-heat oven to 400 degrees F (200 C) and spread dough onto 1 large or 2 small pizza pans and cover with desired toppings. Bake for 25 - 30 minutes.
  6. Remove from oven and allow to cool for at least 5 minutes before serving or all of your topping will come off when you slice it.

Healthy Spunky Monkey Oatmeal Muffins

So, Ben & Jerry make this awesome ice cream flavor called chunky monkey, maybe you’ve heard of it. I think it is a fitting title because any monkey that eats that will, in fact, be chunky. I’m not saying it isn’t worth it, I love ice cream, but sometimes monkeys need to be a little less chunky and a little more energetic, or spunky, you know?

I was going for a super healthy banana and peanut butter snack muffin and the chocolate kind of just found its way in there. I tried, okay? That seems to happen a lot around here.

These may not be as healthy as planned, but they are still pretty good for you. No refined sugar or flour. The yogurt and peanut butter add some healthy protein and the oatmeal and whole wheat flour add fiber. They would make a great quick breakfast or on the go energy snack. They are also good for kids when they need something to tide them over until dinner or when they are playing hard.

 They are moist and perfectly dense with bites of chocolate here and there. Try them cold, they’re awesome that way.

Total Time: 50 minutes

Healthy Spunky Monkey Oatmeal Muffins

Ingredients

  • 3/4 cups creamy or chunky peanut butter
  • 3 medium bananas
  • 1 cup raw sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 cup plain non-fat or Greek yogurt
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 2 teaspoons vanilla extract
  • 1 cup whole wheat flour
  • 1 1/2 cups oatmeal
  • 4oz.(100g) semi-sweet dark chocolate chips or chunks, about 1/2 cup
  • Toppings:
  • 4oz.(100g) semi-sweet dark chocolate chips or chunks, about 1/2 cup
  • 1 tablespoon butter

Instructions

  1. Pre-heat oven to 350 degrees F(180 C). In medium bowl, use a fork to mash banana with sugar and peanut butter. Add eggs one at a time. Add all other ingredients and mix well.
  2. Divide into two muffin tins, greased or lined with muffin liners. Bake for 30-40 minutes until toothpick comes out clean. Remove from oven and place on cooling rack until cooled.
  3. Melt chocolate and butter in a double broiler or microwave and drizzle over muffins. You can use a pastry bag or do what I did and just drizzle with a fork.
