Moist and Yummy Banana Cake Did you know that the southern hemisphere has opposite seasons from the northern? Well When I first found out that my family was going to be moving to South America I didn’t know that. Of course I felt really stupid when I found out. Anyway, this week has been very warm which makes all of our produce spoil faster. Some bananas, in particular, were getting rather brown and when life hands you brown bananas what do you do? You make……BANANA CAKE!

There are so many things about living here in Chile that I love, but the quality of appliances is not one of them. For example the oven I am using right now does not have a temperature gauge or a timer. All I have to go by is Alto, Medio, and Bajo: High, Medium, and Low (because that’s not obvious at all).

Assuming that you have a reasonable oven (Jerks), preheat it to 350° F or 180° C. Now peel your bananas and place in a large bowl and smash with a fork , a whisk, or an electric mixer.

Next add butter and sugar and mix until well combined, then add everything else except flour and stir. Once all ingredients are mixed add flour and beat until smooth.

Pour into a greased 13×9 pan and bake for about 25 to 30 minutes, watching carefully at the end because ovens do vary.

Now that it’s done it’s time to make the frosting unless your one of those crazy people who skip that part. Simply combine ingredients in a medium bowl and whisk until smooth. I like to frost the cake while it’s still slightly warm because it keeps the moisture in.

Here’s the best step, cut and serve!

  • 1 1/2 cups sugar

  • 3-4 very ripe bananas
  • 1/2 cup heavy whipping cream or sour cream
  • 1/2 cup plain or greek yogurt
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. vanilla extract
  • 2 cups flour
  • For the Frosting:
  • 1/2 cup butter
  • 4 1/2 cups powdered sugar
  • 3 1/2 Tbs. milk
  • 2 tsp. vanilla extract
  • pinch of salt

Instructions
