I have been taking way too many pictures recently. It always seems like a good idea at the time. Better safe than sorry, you know, but then I end up having way too many to choose from and having the hardest time deciciding. It’s a problem.

It has taken me a long time to get this far and I obviously need a lot longer but I at least feel like I am getting a little better at it….maybe.

Triple Chocolate Sour Cream Scones1 Today I am posting one of my favorite new recipes. You seriously have to try it unless you are a scone hater. I mean, is it just me or are scones notorious for being dry and bland? The people who think that have obviously never had a good scone.

Triple Chocolate Sour Cream Scones3 My family loves scones but I usually just do basic. This time we needed a serious chocolate fix so went for triple chocolate and the results pretty much speak for themselves.

Not sure how that happened but I am just gonna go with it. They’re like chocolate chip filled chocolate poptarts which basically eqauls perfection in my book.

Triple Chocolate Sour Cream Scones4 I love how easy it is to make scones  with a food processor. It does feel a little bit like cheating but it saves so much time and frustration. I think I use my food processor everyday. I pretty much love that thing.

Yield: 18 - 24

Triple Chocolate Sour Cream Scones

Ingredients

    Scones
  • 1 cup (2 sticks) ice cold butter
  • 3 2/3 cups flour
  • 1 cup cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 2 1/2 teaspoons baking powder
  • 1 1/2 cups sugar
  • 1 cup sour cream
  • 1 egg
  • 1 cup semi-sweet dark chocolate chunks or chips
  • Chocolate Icing:
  • 2 tablespoons cocoa powder
  • 3 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar

Instructions

  1. Pre-heat oven to 375 degrees F (190 C).
  2. Cut butter into cubes and place in food processor with dry ingredients. Pulse a few times until mixture is crumbly. Add vanilla, egg, and sour cream and pulse a few more times until a dough forms.Add chocolate chunks and pulse just to mix them in.
  3. Dump dough onto a lightly floured surface and divide into 3 balls. Flatten each ball into a disk and place on greased or parchment lined baking tray.cut into 6 or 8 triangles and spread each section about 1 inch apart.
  4. Bake for 15 - 20 minutes until edges are golden. Remove from oven and cool completely
  5. For Icing, whisk all ingredients together in a medium bowl until smooth. Drizzle over scones when cooled and allow to dry before serving.

Glazed Chocolate Chunk Scones

Everyone in my family is a chocolate lover/addict. When I make something sweet without chocolate I can usually count on my brother to either ask why it doesn’t have chocolate, say that it would be better with chocolate, or just stare at me deer-in-headlights like I may have a mental disorder. On the other hand, my 5 year old sister insists that she doesn’t like dark chocolate. If it contains dark chocolate she usually won’t eat it, yet sometimes she loves it. Five year olds are very unpredictable. I adapted this recipe from one that used blueberries instead of chocolate.

 

Preheat oven to 350 degrees F (180 C) and combine dry ingredients in a large mixing bowl.

Cut in cold butter using pastry cutter, food processor, knives, or forks (I used two forks but this can be time consuming).

They do not make sour cream in Chile so when I use a recipe that calls for sour cream I either use yogurt or make my own (I will have to post how to do that sometime. It’s really simple). For this recipe I used a 1/2 sour cream and 1/2 plain yogurt. Mix sour cream or yogurt with egg and vanilla. Pour mixture into dry ingredients and stir lightly. Fold in chocolate last.

Spread out on greased or nonstick pan. You can do scones many different ways. If you like more edge you can cut them and separate them before baking or bake first and then cut. My family likes them on the doughy side so I do the latter. You can also do whatever shape you like: circles, squares or triangles. Usually I would be lazy and put them on a single cookie sheet and bake first and cut after into squares or triangles, but the oven I am currently using is not wide enough for a cookie sheet. Therefore, I decided to do these on two nonstick pizza pans.

Bake for 15-20 minutes or until edges start to brown.

While the scones are cooling, whisk all ingredients together for the glaze. Start with 2 cups of powdered sugar and add until you reach desired thickness.

When completely cool drizzle glaze over scones and let dry for 30 minutes to 1 hour until glaze is hard.

  • 2 Tbs. milk
  • 1 tsp. vanilla
  • pinch of salt
