Orange You Glad I Did Say Banana Popsicles

 There are just a few more days before we leave for our trip. In my family these are always the hardest because there is so much excitement, so much to do, and everyone is just trying to remember to bring their toothbrush. Orange You Glad I Did Say Banana Popsicles (3)

It can get kind of crazy. Although, there is also that impatience that you feel when you want a trip to get closer so you can just get to where you are going.  Orange You Glad I Did Say Banana Popsicles (4)

My little sister Sophie, like every other 5-year-old, loves popsicles. She never misses a chance to ask me to make them when she thinks of it. Usually, I have so many other things that I am working on that I just don’t have time and the thought of adding more dishes to the always-growing heap doesn’t help. Plus, it isn’t exactly popsicle-craving weather here with it being winter and because it is winter there isn’t a huge variety of fruits right now. Orange You Glad I Did Say Banana Popsicles  She has been asking a lot though, so yesterday I decided to make her some popsicles. Besides, we need to get ready to jump into summer anyway and these are the perfect thing.

These are very simple popsicles. There are only 5 basic ingredients plus the optional vanilla and they are Sophie approved.

Orange You Glad I Did Say Banana Popsicles

Prep Time: 10 minutes

Yield: 6 - 8 servings

Orange You Glad I Did Say Banana Popsicles

Ingredients

  • 2 medium bananas
  • 1 cup 100% orange juice
  • 1 cup Greek or plain non-fat yogurt
  • 1 1/2 cup pineaple chunks
  • 1/4 - 1/2 cup sugar or to taste
  • 1 teaspoon vanilla extract

Instructions

  1. Blend the first 4 ingredients and vanilla, if using, together in a food processor or blender. Add the sugar a few tablespoons at a time and adjust to your taste. Keep in mind that they tend to taste a little less sweet when frozen.
  2. Pour into popsicle molds and leave a little room for expansion.
  3. Freeze for 4 - 6 hours and enjoy.

Hey, It’s Tuesday Smoothie

I am always amazed at what can go into a smoothie without anyone noticing. I have hidden some pretty crazy things in my smoothies. Things that my little brother and sister would never eat even if their life depended on it. Most of the time they turn out really good…..except for when they don’t. For example, I recently made a smoothie and added a stray grapefruit that had been lying around. No one in my family has ever liked grapefruit so I had never really tried it before. I found out the hard way that grapefruit is a little bitter.
IMG_6980-2p   It was an honest mistake but, let’s just say that I will not be using grapefruit again anytime soon. With as much cooking and experimenting as I do, there has to be a certain percentage that doesn’t turn out well. I think it is important to be able to laugh at one self and aknowledge that you are only human when you fail. I thought that I would play it safe today and make a simple smoothie. I couldn’t decide what to call it. I couldn’t even remember what day it was. What is today….?

Ingredients

  • 1 small apple, peeled and cored
  • 1 banana
  • 1 1/2 cups frozen mixed berries
  • 1 cup milk
  • 2 teaspoons lemon juice
  • 1/2 cup low-fat strawberry yogurt
  • 1 tablespoon honey (optional)

Instructions

  1. Blend all ingredients in blender or vita-mix and serve
