Bacon, Eggs, and Gravy Breakfast Quesadillas9 Well, since there isn’t much hope of catching up how about settling for enjoying every moment to it’s fullest? I can toast to that. A big part of that is enjoying the good things in life like family, friends………. and bacon. You feel me?

Bacon, Eggs, and Gravy Breakfast Quesadillas0 Yep. I know I’ve said a thousand times before and I’ll say it a thousand times again, nothing brings em in like the smell of bacon. I’m telling you, it’s magic.

Bacon, Eggs, and Gravy Breakfast Quesadillas8 Confession: I personally don’t really even like eating bacon by itself, never have, but the smell when I’m cooking it and the happiness it brings to the house are two of my favorite things ever. Not to mention the many, many, ways I’ve found to use the bacon grease afterwards.

Bacon, Eggs, and Gravy Breakfast Quesadillas5 Take this recipe for example. You fry the bacon and then use the grease to make the world’s best gravy. I tried doing the whole thing in one pan to save on dish-washing but I just ended up with a different set of dishes to wash so I figure 2 small pans is a small price to pay to make these. They are well worth it.

Bacon, Eggs, and Gravy Breakfast Quesadillas6 I’m not entirely thrilled with these pictures but I’m just relieved that my curse of quesadilla photography seems to have lifted. I have had more than one instance in the past of having to scratch a whole quesadilla recipe due to horrible pictures. One of these times it was a mushroom and carmelized onion quesadilla that I swear looked like beetles and worms. Ewww! It may have been great for Halloween but not for triggering reader’s appetites. Just sayin’

Bacon, Eggs, and Gravy Breakfast Quesadillas4 For some reason it’s just so hard for me to capture a quesadilla on camera in a way that doesn’t make people either feel sick to their stomach or just extremely puzzled as to what they are looking at.

Bacon, Eggs, and Gravy Breakfast Quesadillas2 Then there is the yellow element of eggs and cheese that has always challenged me. How do you get eggs to look natural without being washed out or colorless? I think I failed miserably there.

Bacon, Eggs, and Gravy Breakfast Quesadillas

Cook Time: 30 minutes

Total Time: 45 minutes

Bacon, Eggs, and Gravy Breakfast Quesadillas

Ingredients

    Quesadillas:
  • 8 slices uncooked bacon
  • 4 eggs
  • 1 cup or 4 slices of gouda cheese (or cheese of choice)
  • 4 medium to large tortillas
  • salt & pepper to taste
  • Gravy:
  • reserved bacon grease
  • 3 tablespoons flour
  • 2 - 2 1/2 cups whole milk
  • salt & pepper to taste

Instructions

  1. Cook bacon in a medium skillet until crispy. Turn off heat and place bacon on paper towel lined plates and reserve pan with grease.
  2. Now make the gravy. Sprinkle flour into the grease and stir until smooth. Slowly stir in milk until no lumps remain and place back over low heat. Stir constantly until thickened then add salt and pepper to taste, remove from heat, and set aside.
  3. Lightly oil or spray a small skillet and place over low heat. Beat eggs in a bowl and add salt and pepper to taste. Pour into pan and scramble until fully cooked. Remove from heat.
  4. Layer each tortilla with cheese, eggs, crumbled bacon, and drizzle gravy. Lightly grease another pan (if your eggs did not stick then the egg pan will do.) and place over medium heat. Lay 1 tortilla at a time flat in pan and allow cheese to melt. Then fold over and cook on each side until both are browned.
  5. Serve with extra gravy for dipping.

Chipotle & Golden BBQ Sauce Chicken Quesadillas with Pineapple Salsa

I am going to tell you a very short story. Shortly before I left the States I fell in love. It was nothing too serious but it had potential. We met at a dinner in my aunt and uncles house and I was head over heals immediately. The problem was that it could never work out between us. I was moving out of the country and my new love was staying behind. We were forced to say goodbye. That was the last time we saw each other. The name of my lover, Trader Joe’s Carolina Gold BBQ Sauce. I decided that if we couldn’t be together I would have to find a replacement.

If you shop at TJ’s and have ever had this sauce then you may understand my obsession. It is like the lovechild of BBQ sauce and honey mustard. It is fairly simple to make, but WOW is it good. My copycat version is not quite as golden as TJ’s but who cares, it tastes like gold.

I know I haven’t posted in a few days but I have a good excuse. I had a very hectic weekend. Friday was my teenage brother’s fifteenth birthday and I made him one of his favorite dinners, cheesy potatoes and pork. Then I made one of his favorite desserts, Glazed Chocolate Chunk Scones. On Saturday, I handmade, rolled out, and cooked dozens of tortillas.  Then I made refried beans from scratch, did a bunch of laundry and dishes, got soaked in the rain while riding my bike, and made two separate carrot cakes; one diabetic and one not so diabetic. Sunday we had a group of friends over for a taco lunch. This was something new to many of them and we had to demonstrate how to properly pick up and devour a taco. That was pretty entertaining in my opinion. It is unbelievable how many dishes you dirty for a party.

As you can see, I was a little tied up. However I was determined to do a post today. In my attempts for the perfect sauce I used a bunch of ingredients and made a giant mess (like usual), so then I had a vat of copycat Carolina Gold BBQ Sauce. Of course, then I had to make something yummy with it. Like I said before, we have dozens of tortillas. Hence these quesadillas. Sauce + tortillas + chicken + chipotle peppers + pineapple salsa = Amazing!

These are a must try. Seriously, they are so packed full of different flavors. You may fall in love too.

Chipotle & Golden BBQ Sauce Chicken Quesadillas with Pineapple Salsa

Ingredients

    Pineapple Salsa:
  • 2 cups fresh pineapple chunks, diced
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup cilantro, finely chopped
  • 1 small jalapeño pepper, finely chopped
  • juice of 1 lime
  • 1/2 teaspoon salt
  • Golden BBQ Sauce:
  • 1 cup water
  • 1 cup mustard
  • 1 1/4 cup tomato sauce
  • 1 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 3 tablespoons worchestershire sauce
  • 1 teaspoon liquid smoke
  • 1/4 teaspoon paprika
  • For Quesadillas:
  • 1 (7 oz. or 220g) can chipotle peppers in adobo sauce
  • 2 cups shredded cheese of choice
  • 2 cups cooked chicken, chopped
  • 16 small flour tortillas
  • 2 tablespoons butter

Instructions

  1. For Pineapple Salsa: Combine all ingredients in a medium bowl and stir together.
  2. For The Golden BBQ Sauce: Whisk all ingredients together in a medium bowl. Pour into medium saucepan and bring to a soft boil over low heat. Simmer until thick, stirring occasionally.
  3. To Assemble Quesadillas: Mix chicken with 1 cup of sauce and chipotle peppers (you can use less peppers if you don't want it too spicy). Spread on half of the tortillas and top each with 1/4 cup of cheese. Top with other half of tortillas.
  4. In medium skillet over medium-high heat, melt butter. Place quesadillas one at a time on skillet and cook on each side about 1 minute until cheese is melted and tortilla starts to brown.
  5. Serve with pineapple salsa and extra sauce.
