Coffee makes everything better doesn’t it? It’s like God’s little gift to humanity to make life more bearable.

Mocha Pumpkin Spice Latte. When I was little, I used to think “I’ll never like that nasty black stuff Mom and Dad drink!” and yet somehow here I sit completely hooked. I’m still a little bit in denial about it but I have a feeling I won’t be getting over it anytime soon unless forced by a natural disaster, third world war, or something bigger stopping the coffee supply to this country.

I used to think Loralai from Gilmore Girls was so hilarious with her extreme addiction to the jo, but what was even funnier was how Luke always told her she couldn’t have it. Sorry for making references you don’t understand if you’ve never seen the show, but speaking of that, did you hear about the new episodes coming soon? Please tell me you did and that you’re as excited as I am! I never liked the way they ended it and I’m so happy to hear they’re picking it back up! 

Mocha Pumpkin Spice Latte (3) Okay, but more to the point, we have lattes to discuss! I know there’s about a trillion and four recipes for pumpkin spice lattes out there and this one is probably not spectacularly different from them all, but I guess I was feeling left out of the latte club so here’s my contribution. There’s always a big hype about Starbuck’s pumpkin spice latte and, I’ve never actually had one, but from what I’ve heard they’re not all that, but you guys all know how I feel about things being better when you make them yourself.

I added a little chocolate to these but I did my best to keep the ingredients super easy because, really, isn’t that the whole point of coffee in the first place? Who can handle a complicated recipe for coffee before they’ve had their coffee? It’s like a catch 22, oh, or the pinocchio paradox! Heard of it?

Mocha Pumpkin Spice Latte (2) Brock and Chase were all amazed over it the other day, but you might need to make this latte before trying to think about it. What if pinocchio said “My nose is about to grow.”? If he is telling the truth then his nose shouldn’t grow, right? But then it would be a lie, in which case his nose should grow. Did I just completely blow your mind? Have another latte.

Anyway, I just realized recently that I’ve somehow managed to never post a recipe for a hot drink until today, what in the world! Hot cocoa is a must before the year’s out, it’s gonna happen. I’m planning some other fun things for next month, my favorite month of the year and this weekend we’re putting up our tree. I’m putting in my vote that we do everything possible to get a real one this year because our fake one is just that, fake, and it’s size would remind you of Charlie Brown. Poor, puny little thing. Plus, I need the pine smell in the house for inspiration. I really miss that from living among thousands of pines in Idaho and them being dusted with mountains of snow.

Mocha Pumpkin Spice Latte (4) So I made two different versions of this so that one could be vegan for my wonderful vegan readers and friends (love you guys!). But I also know that a lot of you prefer just plain and simple dairy products so there’s that too. This is how I’d like to wake up everyday and I think this would be the perfect way to start of your day come Thanksgiving.  I don’t know if you can tell but I have….. a latte love for this recipe! (Sorry, I’ve got some really punny friends who are starting to rub off on me.)

Mocha Pumpkin Spice Latte (5)

Mocha Pumpkin Spice Latte

Prep Time: 8 minutes

Total Time: 8 minutes

Yield: 1 latte

Ingredients

    Non-vegan version:
  • 1 cup whole milk, warmed
  • 2 tablespoons pure pumpkin puree
  • 4 teaspoons pure maple syrup
  • 1/2 teaspoon cinnamon, plus more for sprinkling
  • 1/4 teaspoon pumpkin pie spice
  • 2 teaspoons cocoa powder
  • 1/4 teaspoon salt (optional)
  • 1/2 teaspoon pure vanilla extract
  • 3/4 cup hot strong brewed coffee
  • Sweetened whipped cream, for serving
  • Vegan Version:
  • 1 cup almond milk, warmed
  • 2 tablespoons pure pumpkin puree
  • 4 teaspoons pure maple syrup
  • 1/2 teaspoon cinnamon, plus more for sprinkling
  • 1/4 teaspoon pumpkin pie spice
  • 2 teaspoons cocoa powder
  • 1/4 teaspoon salt (optional)
  • 1/2 teaspoon pure vanilla extract
  • 3/4 cup hot strong brewed coffee
  • coconut whipped cream, for serving

Instructions

  1. Mix the warmed milk with pumpkin, syrup, and flavorings in a large coffee cup until smooth. Pour in hot coffee and serve topped with whipped cream and a dash of cinnamon!
