Blackberry Syrup Crepes with Honey Whipped Cream (8) Summer is almost over here and I’m pretty sad about it. I’ve never lived anywhere, nor can I imagine anywhere, with better overall summer weather. Yes there have been some normal ups and downs, but I can’t think of one day all season that I was too hot. Actually, there have been more days that I was cold than days that I was hot, and it wasn’t just because I’m the weirdo in the family that’s always cold. What I’m trying to say is that I am not ready for it to be over.

You may remember me mentioning how they grow like weeds in every untamed part of this region. They are not even sold locally because of the vast availability, well I’m guessing that’s why. It would be kind of like trying to sell dandelions, or grass, or something that everyone already has in their yards.

I was starting to get worried that they would never ripen and just fall off in the first frost.

But they are ripe now and I’m the happiest little berry-picking machine you’ve ever seen. Of course, I don’t have nearly the amount of time to go picking as I did last year. I picked a lot of berries last summer but I between blogging, cooking, and the bazillion other things on the to-do list, I just don’t have that kind of time this year. I’m squeezing in some time though, because I adore picking (and eating) fresh berries.

At first I didn’t have very many but now I’m going to have trouble deciding which ones to do because I’ve thought of way too many now, both sweet and savory. Anyone have any ideas or recommendations?

I’m really not sure why I haven’t been making syrups with all of the berries this year because it’s so easy and tastes so good with anything and everything. I know I’ve mentioned that there is no buying maple syrup here in Chile, or maple anything, so we have gone through our withdrawals and I’ve at least found alternatives for things like pancakes. Berry syrup is one of them.

I have only made crepes a few times and every time I do I remember how easy and delicious they are. One of my favorite things about them is the versatility of them being good for sweet or savory fillings.

Each part of the recipe is quick and easy to make and the whole thing can be done in under 1 hour. That’s really fast by my standards.

Blackberry Syrup Crepes with Honey Whipped Cream

Prep Time: 40 minutes

Cook Time: 15 minutes

Total Time: 55 minutes

Yield: 10-12 crepes

Blackberry Syrup Crepes with Honey Whipped Cream

Ingredients

    Blackberry Syup:
  • 3 cups blackberries
  • 2 tablespoons butter
  • 2/3 cup sugar
  • 2 tablespoons lemon juice
  • 1/2 cup water
  • 1 tablespoon cornstarch
  • pinch of salt
  • Honey Whipped Cream:
  • 1 cup heavy whipping cream
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • Crepes:
  • 3 eggs
  • 1 tablespoon sugar
  • 1 3/4 cups milk
  • 2 tablespoons butter, melted
  • 1/4 teaspoon salt
  • 1 cup flour
  • butter or cooking spray
  • fresh blackberries for serving

Instructions

    Blackberry Syup:
  1. Combie blackberries and butter in a medium saucepan over medium heat and cook for a few seconds. Use a spatula to smash berries a bit then add remaining ingredients and stir to combine. Continue cooking for about 10 minutes, stirring constantly, until sauce is thickened. If it gets too thick just add more water.
  2. Now pour through a fine mesh strainer into a large bowl to remove the seeds and chunks (I use this to put in smoothies.) Set syrup aside until ready to use.
  3. Honey Whipped Cream:
  4. Beat cream until it forms stiff peaks them add honey and vanilla and whip until fluffy. Refrigerate until ready to use.
  5. Crepes:
  6. Whisk eggs and sugar in a medium mixing bowl until frothy. Add all other ingredients and whisk until smooth. Heat a skillet over medium heat and lightly grease with butter or cooking spray and pour (about 1/3 cup per crepe) batter into center of pan and use a spatula to quickly smooth into a smooth layer and cook for about 1 minute on each side or until slightly browned. Remove to a plate and repeat with remaining batter.
  7. Assemble:
  8. Spread a small amount of blackberry syrup in a line down the center of each crepe, then spread a few tablespoons whipped cream along side it. Roll crepe up and drizzle with more syrup and serve with fresh blackberries
